Chocolate Chunk Cookies
I had a craving for cookies tonight but I wasn’t sure of what kind so I started flipping through The Joy of Cooking, one of my favorite cookbooks trying to find something to make. I have had the book for as long as I can remember, there are stains spilled from past adventures in the kitchen and the cover is missing – but I would never replace it. it’s like family. I am a firm believer a book should show use. If I go to a freinds house and they loan me a cookbook and its in perfect condition I am a bit skeptical if its any good – but thats just me. So as I flipped I came across one of my favorite recipes; Classic Chocolate Chip cookies. Yes the page is staind from butter, chocolate and vanilla extract but thats a good thing. So tonight I decided thats what I am going to make – but with a slight twist of course.
So here’s my version:Adapted from The Joy of Cooking by Irma S. Rombauer, Marion Rombauer Becker and Ethan Becker (every household should have this book – its an amazing resource).
Chocolate Chunk Cookies
Pre-heat oven to 375F.
1 Cup + 2 tbsp Flour (all purpose)
1/2 tsp Baking soda
1 stick of un-salted softened butter
3/4 cup of Vanilla sugar (I have a big jar of sugar stuffed with Vanilla pods that I use for baking)
1/4 cup Muscovado sugar
1 large egg
1/4 tsp salt
1 tsp vanilla
1 cup of Valhrona 70% chocolate chopped into chunks
1 cup toasted walnuts
Cream together the butter and all the sugar in a mixer. Than add to the mixer the egg, salt and vanilla. Once fully incorporated add the flour and baking soda. Mix all until smooth than add the walnuts and chocolate chunks and incorporate. Use a small ice cream scoop (or 1 tbsp worth) and scoop onto a sheet pan lined with parchement paper (or use a silplat). Bake for 14 minutes (or until golden brown).
The kitchen smelled amazing from them baking in the oven. The scent of chocolate and vanilla wafting in the air I was in heaven. They are quite yummy not too sweet but full of flavor. We may eat them all tonight :)

It’s been hot here, so I haven’t been baking. Thanks for making these. They look incredible. I’ll get in my kitchen when it cools down and make a batch of cookies!

Mmmmm! I need a cold glass a milk now! I LOVE that you specify Valhrona…cheers to all the chocoholics out there. I will HAVE to try this recipe along with your great ways to elevate it!
