Not a great day for chocolates
I woke up this morning all excited about dipping the Pina Colada ganaches. Well that didn’t happen. Something went terribly wrong. They turned to a jelly goo overnight. I think I may have reduced the pineapple puree too much – I was quite upset. So that batch went into the garbage. I started from scratch with a different recipe in hand and the Pina Colada ganaches came out almost perfect. The only thing was I didn’t taste that much rum, other than that they are OK. I also tried a raspberry and dark chocolate ganache. I was having problems with the temper for my moulds so I had to do it all over again – such a pain in the butt. But I did it and they are quite tasty. Andy did a time-lapse video of me making the ganaches I think it’s quite cool (below).

I’ve never had white pina colada chocolates before. It was very good. I had no idea what it would taste like and I guess it surprised me that it really tasted like a pina colada. Loved the raspberry one quite a lot. Thanks.

Very nice! …As always. White chocolate was good choice for the pineapple cube. It had a nice fruity flavor. Did not taste the rum. Coconut flavor was very soft; would have liked to have tasted more of that. Love the cube mold. Orange or yellow dots would be interesting on the tops of these.
Raspberry bonbon had a super dark chocolate bite that went nicely with the raspberry. Have you tried double layers for fillings yet?

Loved these! Especially the white chocolate & pineapple & I don’t usually go for white chocolate. Would love to taste a little more of the coconut & you are right…not enough rum flavor ; ) …but still delicious.
The Raspberry & Dark Chocolate was very BOLD in flavor. Very nice…maybe a little more raspberry???
Can’t wait to see what’s next.

Next time I will add more rum and coconut. I may use a 45% chocolate the when I do the raspberry one so you would taste more of the berrys.

Loved, loved, loved the white chocolate. I wanted more. The chocolate texture on both was perfectly crisp and the filling was the right balance of sweetness and creaminess. These should be the top-sellers!

The dark chocolate and raspberries were delicious! I have to say, though, I thought the amount of raspberry was perfect.
