I finally dipped the marshmallows I made the other day in some Valhrona 66%. They came out quite tasty. Short on time these days and rather busy. So that’s it for now.

There is a feature called Sweet Dreams and the recipes and photos looked great so I decided to try one. It was a Honeycomb candy recipe, now I think I am very good at following directions for a recipe, well let me tell you about this one. Apparently your supposed to cook sugar, corn syrup, water and honey to 325F over a medium high heat which I attempted to do, but around 290F it turned into a black, smoking, bubbling mess! Since I had never made it before I through suspicions aside and continued with the steps. I added the dissolved gelatin and baking soda, stirred it around and poured it into a pan as directed. This was the most disgusting thing I have ever made. I really have to question if this was tested before ending up in print in the magazine.
After that I returned to my new favorite book Baked and made their Peanut butter crisp bars, which came out absolutely heavenly. It has a caramel and rice crispy bottom, the middle layer is milk chocolate and peanut butter and its topped with a dark chocolate ganache. I don’t even know if they will make it to work tomorrow for people to taste as I keep nibbling on them. I cant wait to try some more recipes from this book. Anyone who likes baking I highly recommend this book its wonderful!
Then it was on to chocolate marshmallows. I have made them before with no issues so I am letting them dry out overnight and tomorrow I will dip them in dark chocolate.

Another Moist Cupcake

Then I thought that I should make some cupcakes to go along with the butercream I made yesterday. So I tried out Gregg’s suggestion of using the recipe on the back of the Hershy’s cocoa box (Hershy’s Chocolate Cake Recipe). I just made one substitution; instead of Hershy’s cocoa powder I used Cacoa di Pernigotti cocoa powder. I also undercooked it slightly only cooking it for 16 min. It came out amazing! A very moist cupcake indeed. Thanks Gregg!
Since I had the leftover egg whites from the buttercream I decided to try Martha Stewart’s Marshmallow Frosting recipe. It was nice although a little too sweet for me. If I do make it again I would add either orange zest or vanilla bean to give it a little extra kick. Still working on the video since we had to include scenes of using the buttercream with the cupcakes from today!

Day 1 / Citrus Confit, Soft Caramels and Chocolate Marshmallows

I started making a citrus confit out of lemon and orange rings and are for my chocolate truffles which I will make tomorrow. Still not sure which truffles I will make but at least one of them will use the confit, for all the time it took to make them (since the 1st batch got ruined when the A/C went out).
I also started making my soft caramels when I realized that I was getting different readings from 3 different thermometers! I am still not sure which one to use but I went with the red one and I should have gone with the white one as they came out a little soft. The flavor was great I love using fresh vanilla with all the little flecks – it’s so fragrant and makes the caramels look so special. Andy cut them into squres so tomorrow they can be dipped into tempured chocolate. I hope they come out well.
Finally I decided to make chocolate marshmallows, they came out quite good I just love the roughed hune texture and flavor. Even though the recipe called for 1.5 ounce or a 1/4 cup cocoa powder – but when I measured a 1/4 cup of cocoa powder it didnt equla 1.5oz. so I just added somewhere in-between. Nect time I will add the full 1.5oz instewad of using a meassuing cup – I think it will give it a richer more chocoloate flavor. The recipe called for honey and you can taste it in the marshmallow which I didnt care for too much so I wont use it next time.
