Tonight I had to try making the nougatine again. This time I think I got the caramelization just right. I made little nougatine baskets with lids to send to our parents that will be filled with chocolates. For the first time doing it I think it came out OK. I still would like to get it a little thinner the next time around. Working with the hot nougatine burnt the palms of my hand and they still hurt. You have to work very quickly otherwise it becomes too brittle – if that happens just pop it into the oven at 215F for a few minutes to make it more playable.
This weekend I will have to make a bunch of chocolates to pack into the baskets to send off to our folks. I still need to figure how to pack it for shipping so nothing gets broken and hopefully the ice gel packs will help the chocolates from melting. I’ll let you know how they arrived on Tuesday.
